Mythical red from Pupillin: finesse, red fruit, subtle texture and a rare transparency. A bottle that whispers rather than shouts, yet with absolute depth and identity.
Wine details
The producer
Maison Pierre Overnoy is one of the most iconic names in natural Jura wine.
Rare, deep, and sought-after bottles, with immense cultural power in the living wine world: wines of time, substance, precision, and freedom.
Vineyard and cellar
About six hectares around Pupillin, on marl and limestone, farmed organically by hand. The Poulsard (here they call it Ploussard) ferments on its own yeasts with a carbonic touch, then ages in old oak casks.
No added sulfites, no fining, no filtration. This is the school of Pierre Overnoy, who took sulfur out of the cellar in the 1980s, now carried on by Emmanuel and Anne Houillon.
In the glass and at the table
Pale, almost transparent colour. Cherry, redcurrant, wild strawberry, a touch of spice and forest floor. A fine, juicy, vibrant sip: barely-there tannin, lots of acidity, a depth that builds slowly.
At the table with charcuterie, poultry, mushrooms, a young Comté. Serve cellar-cool, 14–15 °C, and give it time: it changes a lot in the glass.
