Re-fermented in the bottle. Full of energy, very saline, with apple and lemon notes. If you wait a few minutes longer, citrus, chamomile, and delicate liquorice notes emerge.

The greatest living Lambrusco producer? Perhaps. Quite a heretic, considering we are in Villimpenta, in the Mantuan region. We have been drinking the great Paolo's wines for many years: initially a discovery, then a talent, now in our opinion a star.
If anyone still has any doubts about Lambrusco, try the energy of Paolo's Ruberti, wild among the wild. A master in the vineyard and cellar, with a surprising touch and terroir.
There's something different in Villimpenta: drink to believe.
