Refermentation in the bottle using the ancestral method, not disgorged. Delicate effervescence, Golden apple and tropical fruit notes. On the palate, it is juicy, taut, and marine, with a dry, tight, and super refreshing finish. Extremely limited production.

The producer
Hasi Berriak is located in Urdaibai, a nature reserve in the Basque Country where the green hills of Bizkaia meet the white flysch cliffs on the ocean. A harsh, fascinating, and extremely saline terroir.
Artisanal Txakoli from Hondarrabi Zuri and Zuri Zerratia, with meticulous viticulture, recovery of indigenous varieties, and precise vinification. Tense, iodized, and profoundly contemporary wines, a far cry from the pintxos bar Txakoli.
