Chénas Au Buchonet "Pauline" 2024 – Yohan Lardy

Carbonic maceration followed by 6 months in 500 L barrels. Spontaneous fermentation, no filtering or fining. Here, winemaking is independently managed by Pauline, Yohan's wife, who actually signs the wine. The identity of Chénas strongly emerges with darker fruit, dried flowers, and more prominent tannins. Vegetal notes and a beautiful spiciness.
