Half Trousseau, half Pinot Noir: the red side of the southern Jura according to Jean-François Essler. Wild berries, wild herbs and lovely aromatic complexity, with light tannin and natural freshness.

Grown on Lias and Trias marl. Spontaneous fermentation and ageing in tank and barrique: a red to let breathe in the glass, able to accompany a meal without weighing it down.

Try it with charcuterie, roast poultry or mushrooms. Serve at 14–16 °C.
