Monopole that is almost a discovery, 1.8 ha, surrounded by woods, south-west facing, on clay-limestone soil. Young vineyard. Stainless steel only.
Here the concentration increases and the spectrum changes, without losing Xavier's style: lemon, white flowers, distinct minerality. On the palate, it is taut, savory but accompanied by a lot of glyceric richness.

The producer
Xavier Yverneau is one of the new names of northern Burgundy, in the Yonne. Born into a family of vignerons, he founded his domaine in Vézelay in 2022, then took over the family vines in Vermenton and added Irancy in 2024. Limestone hills, a cool climate, a Burgundy far from the big names and a stone's throw from Chablis.
No herbicides or synthetic chemicals, everything by hand from pruning to harvest. In the cellar, native yeasts, gentle extractions, ageing in demi-muids and concrete, and sulphur cut to the bone. Taut, chalky Vézelay Chardonnay, fine and crunchy Irancy Pinot Noir, lively Aligoté: fresh, precise wines full of energy.
