Vezelay Come de Gros Mont Demi-Muid 2023 – Xavier Yverneau

Same monopole as above, but aged in exhausted 500L demi-muids. The wood adds depth and breadth without stealing the show; the sensations change a lot, leaning towards fruit and salt. Creamy yet still taut on the palate.
